Hamburger soup
This is a family staple at our house. It's hearty, tasty, and very easy to make. I usually start it right after lunch and let it simmer until dinner.
Today we have over 20cm of fresh snow and it's -19C . . . brrrrr . . . this soup is a good thing to have on hand!
Hamburger Soup
PREP 30 MIN | TOTAL 2 HRS
1 1/2 lbs ground beef
1 onion, chopped fine
1 28 oz can tomatoes
2 cups water
3 cans consomme
1 can tomato soup
4 carrots, chopped
1 bay leaf
3 sticks celery, chopped
parsley
1/2 tsp thyme
pepper to taste
8 Tbsp barley
BROWN meat and onions. Drain well.
COMBINE all ingredients in large pot, simmer covered at least 2 hours, or all day!
SERVES 10.
